This project is part of Laurent Milon's graduation, which focused on creating shapes that would evade the limits of nowadays' industrial process, for they would be generated partly thanks to natural process.
The Petit Maelstrom is a pastry designed with 3 consecutive whirlpools. The first one is made of cold water, and generate a caramel cone. Second one is made of boiling oil, and fries a vanilla biscuit cone. Third one is made of boiling water, and cook a ball of bitter orange flavored egg white. Bon appétit !
